Crispy Brussel Sprouts with Bacon and Dates

David was out of town this week for work so dinners for me looked a bit different. Lots of scrounging, lots of cheese, and not a lot of actually cooking. But I did pull out a few things we had on hand one evening to make this recipe. It took a total of 15 minutes and I ate most of it, so what I planned as a side dish, became my main course.

Note: I had pig jowl in the freezer, compliments of my pig farmer brother and pit boss father, so I used that instead of traditional bacon.

INGREDIENTS:
1 pound brussel sprouts, cut into quarters
4 – 5 slices bacon, chopped into pieces
1/3 cup dates, pitted and sliced
3 tablespoons balsamic vinegar
1 tablespoon brown sugar
salt and pepper, to taste

DIRECTIONS:
1. Heat a large fry pan over medium heat. Add the bacon and stir around until pieces have separated and bottom of the pan is covered in bacon grease. Cook for 1 – 2 minutes.
2. Add the brussel sprouts and mix together with the bacon. Let cook for 10 – 15 minutes, stirring occasionally, or until the bacon is cooked through and the brussels have turned crispy and blackened in places.
3. Add the dates, balsamic vinegar, brown sugar, and salt and pepper. Mix everything together. Let cook another 2 – 3 minutes.
4. Remove from heat, and serve immediately.
